Chocolate Treats - The kids love these!

Ingedients

Bananas
Chocolate

Method

Cut the bananas into 3 inch pieces.
Place a ice block stick up each end of a banana piece.
Dip each banana piece into melted chocolate.
Place on a oven tray covered with grease-proof paper. Freeze.
Once frozen wrap seperately place in sealed plastic bag so they don't dry out in freezer.
These never last long!


Flamed Bananas

Ingedients

50g butter
4 bananas
1/2 cup brown sugar
1 tsp vanilla essence
1/2 cup brandy
Cream or ice cream

Method

Melt butter in pan.
Cut the bananas into quarters and fry gently until they are just heated through.
Sprinkle the brown sugar and vanilla over the bananas. Continue to cook until the sugar has melted.
Pour over the brandy, heat for about 20-30 seconds.
Ignite the brandy.
Serve with ice cream or whipped cream


Rhubarb And Banana Jam

Ingedients

1 kg trimmed rhubarb
1kg sugar
1/4 cuplemon juice
3 large ripe bananas
1 tsp butter

Method

Slice the rhubarb finely and place in a large plastic bowl.
Add the sugar and lemon juice, stir and leave for 3 hours for juice to form.
Transfer to preserving pan and bring slowly to boiling point stirring constantly until the sugar has dissolved.
Boil gently for 30 minutes or until thick.
Slice the banana and add to the jam. Boil for a further 5 minutes.
Add the butter and skim off any froth into a small bowl, (yum). Pour the jam into sterilised jars and cover.


Walnut Banana Bread

Ingedients

100g butter
225g sugar
2 eggs, beaten
3 ripe bananas, mashed
225g flour
1 tsp baking soda
1 tsp salt
75g walnuts, chopped
Grease a loaf tin well.

Method

Cream the butter and sugar. Gradually beat the eggs into the mixture.
Add the mashed bananas and mix well.
Fold in the dry ingredients until well blended. Mix in the nuts. Put the dough into the tin.
Bake at 180
